Haricot Beans Soup
This can be eaten as healthy and nutritious breakfast. This dish can be eaten with some salad and bread.
Ingredients of haricot soup
Dried haricot beans- 500 g
Olive oil - 1 and 1/2 tablespoon
Bicarbonate of soda - 1/2 tablespoon
Salt according to taste
For the sauce
Garlic - 1 large clove
Dried chili pepper- 1/2 – 1
Olive oil - 2 tablespoon
Salt and ground pepper according to taste
Garnish - 4 sprigs basil
Firstly-This recipe needs a day before preparation to serve this dish. Rinse the beans and place in a big bowl with enough water, soak for overnight and add 1/2 tablespoon bicarbonate of soda.
Secondly- In the morning place beans in a pan or pressure cooker with water and boil it. Simmer gently for about one hour until the beans are very soft. When beans are nearly done then add large pinch of salt.
Thirdly- When the beans are cooking same time make the sauce. Heat the olive oil in a pan over a low flam and add partially crushed the garlic clove. After garlic is pale golden brown, add the chopped tomatoes. Turn up the heat; add the seeded, crumbled chili pepper and Stir it continuously for few minutes. Now Cook slowly for one hour and until beans are soft.
Forth and final-It’s ready to serve now. Pour in soup bowl, Garnish with basil sprigs and serve with garlic bread.
Note: The important thing to check is the beans are soft in texture. If they are bit hard, soup is not done. Then again Cook until the beans gets soft.
